Cooking Makes Me Happy

Thank goodness for cooking. I think it keeps me sane, at least part of the day.  Still feeling somewhat down over the house/mortgage situation, but, my husband still says to me: " God has a plan for us, and I love you. Didn't you tell me we are richer than 97% of the world?" Yes, yes I did.

We are. We have a roof over our heads, our bills are paid, we are surrounded by family often, and we have each other and God. We have FOOD!

Today, I am making Italian Sausage, Roasted Potatoes, with Peppers and Onions, and we will have salad.  We may or may not be having the company of Mac's sister Joan with her husband Mark and son Sean.  It just started a heavy rain outside, and our big, brave Daffodil dog was out on the porch, and essentially knocked on the door to say " Let in NOW!"  She does not like storms.

These are soooo good, and go well with most anything, even breakfast!  I simply roasted the sausages for the last half of this in the oven.

Best Breakfast Potatoes Ever

  • 1 bag (5 Pounds) Red Potatoes, Cut Into Chunks
  • 4 cloves Garlic, Minced
  • 1 whole Onion, Peeled And Roughly Chopped
  • 2 whole Green Bell Pepper, Seeded And Roughly Chopped
  • 2 whole Red Bell Pepper, Seeded And Roughly Chopped
  • 1/4 cup Olive Oil
  • 1/2 stick Butter, Melted
  • 1 teaspoon Seasoned Salt
  • 1/2 teaspoon Cayenne Pepper
  • Kosher Salt And Freshly Ground Black Pepper
Preheat the oven to 425 degrees F.

In a large bowl, toss together the potatoes, garlic, onion, green bell pepper, red bell pepper, olive oil, butter, seasoned salt, cayenne pepper and some kosher salt and pepper.

Pour potatoes onto two rimmed baking sheets. Bake for 20 to 25 minutes, shaking the pan twice.

Raise the heat to 500 degrees and bake until crisp and brown, 15 to 20 minutes, tossing twice.

Sprinkle with a little more salt and pepper before serving.

My way, I did all of the potatoes in one deeper pan. Ree's way, they would come out browner and crispier.  Also note, how difficult it would look to clean those pans.. not so much, just soak with a bit of soapy hot water for a little bit, and it cleans right out.

OK, today, I am down again, however, I found this video on my Facebook page, and it made me laugh til I nearly cried, so, I am sharing the joy.\

What to make for dinner tonight?  I think one of my comfort foods. Pasta. Tonight I will make what I call Pasta Afanapoli . I did not make up the recipe ,originally. I have just done what I normally do, see or find a good recipe and then " tweak" it into my own.  There was no name for it, and when I ran my little restaurant,  I had to put some name on the menu for the special of the day, so, I came up with a version. The original expression is actually Va Fa Napoli, which means Go Back To Naples.

However, it became an insult, meaning go to Hell, and worse, over the years.  But, here we go:

1 pound angel hair or vermicelli pasta cooked ala dente

1 block feta cheese (basil and sundried tomato is the one I prefer, but, can use plain feta)

1 bag or jar julienned sundried tomatoes ( if packed in olive oil, no worries, add the jar)

Pesto sauce prepared (can be from dried mix, or jarred)

1/2 cup Parmesan cheese ( or more:))

1/4 cup Olive oil ( or more as desired)

Sliced black olives ( optional as much as desired)

Mix pesto and olive oil into pasta, add the additional ingredients, breaking up the feta, toss and serve with a good crusty bread for dipping, and a nice Salad!!

Tips:

 I have eaten this hot, or cold and its good both ways. Add a meats such as diced chicken, ham, salami, prosciutto, etc if desired. Tonight I am adding some cooked shrimp!

Add some fresh garlic sauteed til  softened in the olive oil before adding to pasta. 

Use whatever pasta you prefer or have on hand. I usually use the angel hair as it aborbs the flavors more intensely.

Add more veggies- red onion slices, sauteed mushrooms, marinated artichokes, broccoli, zucchini, whatever you LIKE!

This is good as a meal, or as a side. Also, change up the pasta shapes and make it a salad!
No olives on hand, but, ahh, there is shrimp!
